Atomisation, or spry-drying, consists in the preparation of an aqueous suspension or slurry (maltodextrin, gum arabic and aromatic part) that is sprayed from the nozzle of a rotating turbine into a hot air circulation chamber. The evaporation releases solid particles consisting of the substrate incorporating the aromatic part in the slurry. This results in a new powder concept that microencapsulates the fragrance and makes it persistent over time.
